Steak in Horseradish Butter

Add a baked potato as a great side.
1 pound steak well marbled (sirloin, rib-eye, New Yourk strip or similar)
3 tablespoons butter
2 teaspons store-bought horseradish sauce
Salt and pepper
Set broiler on high and broil steak as close to heat as possible. For 1-inch steak, about 6 minutes (for medium rare) per side.
Meanwhile, place horseradish and butter in your blender no longer than it takes to blend together. When steak is done, divide into servings placing a dallop of horseradish butter on top of each.
Lemon-Pepper Shrimp

Ingredients
1 1/2 shrimp, raw
4-5 tablespoons butter
lemon-pepper
Sprinkle shrimp with lemon-pepper. Let sit about 5 minutes. Melt butter over medium heat in heavy skillet. Add shrimp and saute until pink or cooked through. Best served warm.
Shrimp Curry-Butter Stew

1/4 pound butter
4 teaspoons curry powder
2 teaspoon minced garlic
48 large raw shrimp
Over lowest heat setting, melt butter in a heavy skillet. Stir in curry powder and garlic then add shrimp in a single layer (do this in batches if necessary). Cook until shrimp turn pink, 4-5 minutes. Transfer to serving dish, scraping the curry sauce over shrimp.

Orange Chicken

Ready in under 20 minutes!!! The family will love this one!!! Goes great over fried rice.
Ingredients
2 pounds chicken breasts
1/4 cup oil
1/3 cup orange juice
3 teaspoons sugar
2 teaspons apple cider vinegar
1/4 teaspoon blackstrap molasses
1 teaspoon dijon mustard
1 teaspoon minced garlic or 2 garlic cloves, crushed
salt and pepper to taste
Cut chicken breasts into 4 portions. Place a heavy skillet over high heat. Add the oil and brown the chicken in it. Meanwhile, mix the orange juice, sugar, vinegar, molasses, mustard and garlic.
When the chicken is light golden brown on both sides, add the orange juice mixture to skillet. Continue to cook the chicken for another 7 minutes or so turning once. Salt and pepper to taste. Serve.
Frozen Margarita

(May salt rim of glass. In a shallow bowl, place salt. Rub rim of glass with lime wedge. Place rim of glass into salt to coat rim.)
2 oz tequila
1 oz triple sec
2 oz lime juice
lime wedge for garnish
Into a blender, combine all ingredients (except garnish). Blend. Pour into margarita glass. Affix lime wedge to glass. Add a straw. Serve.
Pina Colada

Ingredients
2 oz rum
5 oz pineapple juice
1 1/2 oz coconut cream
1 cup of ice
cherry,pineapple wedge for garnish
In a blender, combine all ingredients (exceot garnish). Blend. Pour into a margarita glass or brandy snifter. Place cherry into glass on top of frozen drink and affix pineapple to rim of glass. Add a straw. Serve.
Hot Buttered Rum

Ingredients
2 1/2 oz dark rum
4 oz boiling water
1 clove
1 pat butter
2 teaspoons brown sugar
In a glass mug, combine and mix sugar with boiling water. Add rum and clove. Gently float the butter on top. May garnish with cinnamon or nutmeg.

Coffee Royale (EZ)

A tasty coffee drink that will warm you up on a chilly night or anytime!!! This drink should be served in a beautiful glass cup with a handle, though a coffee mug will do just fine.
Ingredients
2 1/2 oz brandy
4 oz coffee
1 1/2 teaspoon sugar
2 oz cream
Combine alll ingredients except cream. Stir. Gently float the cream on top. Serve.
CHICKEN A L' ORIENT

Inspired by the Orient, this recipe is for those who like it hot! Of course, if the heat is too much for you, leave out the jalapenos. Goes wonderfully with rice or steamed veggies.
Ingredients
3 tablespoons vegetable oil
1 tablespoon grated gingerroot
2 cloves crushed garlic
*11/2 pounds boneless chicken breast, cross-cut thinly
2 tablespoons sugar
¼ cup soy sauce
1 teaspoon fish sauce
¾ cup dry white wine
1 fresh jalapeno
1 teaspoon pepper
Slurry (Stir together with a fork or whisk about 1/8 teaspoon cornstarch and ½ cup water. Ensure water is cold to prevent sauce from clumping.)
*easier if the meat is partially frozen
Ingredients should all be cut and measured because the cooking process goes fast once everything starts hitting the pan.
Place wok or heavy skillet over high heat. Add oil and let it heat a minute give or take, then add ginger and garlic. Stir a bit to infuse flavor into oil. Add chicken and allow to fry about 2 minutes. Add sugar, soy sauce, fish sauce, white wine, jalapeno and pepper, stirring often for about 7 minutes or so, or until chicken is cooked through. Add a bit of slurry to slightly thicken the juices. Serve.

Orange Peking Burger

This recipe is delicious, simple and ez to do. A side of fries or chips will complement this nicely. For something lighter, a side salad with vinegar and oil dressing.
INGREDIENTS
Burgers
1 pound ground meat (hamburger, turkey, lamb, etc)
1/4 to 1/2 cup medium diced onions (about 1/2 small onion)
1/4 cup soy sauce
1 teaspoon sugar (granulated)
1 teaspoon minced garlic
1/2 teaspoon grated ginger root
4 onion buns or buns of choice (Tastes just as good on two slices of whatever bread you have)
Sauce
2 tablespoons orange marmalade (apricot preserves will do in a pinch)
1/2 teaspoon soy sauce
1/8-1/4 teaspoon gingerroot
For burgers: *Preheat pan on stove to med-high.
In a bowl, place all ingredients. With clean hands, “smoosh" them together thoroughly. Flatten the mixture out a bit in the bowl. "Score" into even portions. Then, begin separating them and form into evenly sized patties.
Place burgers in pan. Then leave them alone. Cook about 5 minutes on each side or until desired doneness is achieved.
For Sauce: While burgers are cooking, mix ingredients for sauce together in a small bowl.
When burgers are done, drain and let rest for a few minutes (about 4-5).
Next place burgers on heel of onion bun and top with a teaspoon of sauce. Place bun caps on top of burgers and serve.
*May also cook on an electric countertop grill such as, George Foreman.
